Today is ridiculously gorgeous. Sitting at my computer, this is what I see out of the window. A little rain the other day and all that L.A. smog disappears (for this morning at least).
This is one of my favorite breakfasts to eat and beyond easy to make. I’ve heard this called a lot of different things, but I call it a One-Eyed Pete.
Here’s how you make it: Spread butter on both sides of two pieces of bread. Put them in a frying pan and cut a circle out of the middle of each bread slice. Over a burner on a medium heat, crack an egg into each circle and fry each side until they’re done. My favorite is when the eggs are still slightly runny in the center. And make sure to throw those bread circles in the pan, too, so you get them nice and buttery toasted. Enjoy!
